Description:

The stem was hollow-ish and difficult to chew and eat since it was so tough and stringy. according to this video https://www.youtube.com/watch?v=45GiiSii3Zo the Marsh thistle needs the outer layer of the stem peeled off in order to eat the inner pith. Thanks Ernst, I've gone with Marsh Thistle in the end since the Marsh Thistle has clusters of flowerheads as does the Welted Thistle
