Field Notes

Description:

Tall plant with a woody stem. Bluish-purple flowers. Basal leaves somewhat resemble dandelion leaves. Native to Europe. Considered a weed in many places as it tends to grow well in disturbed areas.her

Habitat:

Man-made clearing bordering forest, Herkimer Diamond mine area.

Notes:

Leaves can be eaten as cooked greens or blanched for salads. Roots are roasted and ground to make coffee substitute.
