If you are able to find out which subspecies, you can add it later. Until then, it is perfectly acceptable to just make it Meleagris gallopavo. Nice catch! I've seen wild turkey before but never seen the males all on display.
The bird on the right is a hen. The bird on the left is a tom or gobbler. He is strutting, a display to advertise himself as a fit mate
This would represent the Eastern subspecies of wild turkey. Nice photo!
