Notes:

White, as big as a grey heron, but fully white except the yellow beak. I'm thinking about a Western Cattle Egret, but as I took the picture two weeks ago south of Paris, I doubt. Any idea?

Subspecies A.a. modesta is out of range for France: http://en.wikipedia.org/wiki/File:Ardea_modesta_map.svg I agree with Great Egret, Ardea alba, should be nominate subspecies.
Bonjour Arnaud! This is the great egret I think, and the spotting area would in its winter range. This species is moving further north.
