Mediterranean hartwort (Καυκαλήθρα)

The inflorescent of the Mediterranean hartwort (Tordylium apulum) is an edible annual forb or herb, used in several traditional Greek recipes, but most commonly in the herb & feta cheese pie. It was spotted in an olive grove near Volos city, Greece.
