I suspect this beetle has sustained some damage by way of being squashed and the yellow substance is entrails. As blister beetles, they produce toxic substances that may cause severe illness to grazing cattle, etc ingesting them in pastures. They are also called oil beetles and presumably have oily secretions. Without local knowledge of this beetle, this is my guess.
