I think Leuba is correct, just a "normal" mouse. :-) Here's my spotting of this species for comparison: https://www.projectnoah.org/spottings/14457207
Notomys alexis is in the Australian desert only. This looks like a normal mouse to me.. they can jump really high when they need to.

It jumps really high... does that help?
Hard to say for sure from this image. Do you have other pictures? Maybe Cairo Spiny Mouse (Acomys cahirinus), which does occur in Sinai. Or maybe one of the jirds or gerbils.
Is this a pet? The species you have identified this as isn't found in Egypt.
