Nice spotting! The stamens are spring loaded, folded back into the petals. When the anthers are mature and ready to release pollen, the fist insect that lands on the flower causes the stamens to pop out of the petals, smacking pollen onto the insect. Touching the inside of the flower with your finger can cause the same result.
