Field Notes

Description:

Tall plant (this one was easily four feet tall) with large curly-edged leaves. Tall spires with many seed pods at top that start green and turn to red with age.

Habitat:

Cedar Creek County Park, New York. Found on the edge of a marsh in a little used area of the park.

Notes:

Young leaves can be eaten as greens after boiling with many water changes. Seeds are also edible. The plant contains large amounts of oxalic acid. Native to Europe and Asia. Has become naturalized in many areas.
