Porte: Hierba anual vigorosa, de tallo erguido, nudoso y macizo, entre 60 cm y más de 6 m de altura. Raíz fibrosa y fasciculada
Hojas: alternas, lineales o lineal-lanceoladas, largas. Flores: monoicas (las masculinas se encuentran separadas de las femeninas pero en la misma planta). Flores masculinas dispuestas en una inflorescencia de tipo panícula de aprox. 30 cm de largo (en la parte terminal del tallo) que está formada por racimos que llevan numerosas flores pequeñas llamadas espiguillas, dispuestas en pares, de 8 mm a 12 mm de largo. La inflorescencia femenina es una estructura axilar única, variable en tamaño y forma, llamada mazorca, con varias hojas modificadas (brácteas) llamadas panca que envuelven el grueso eje central (coronta) sobre el cual se distribuyen las espiguillas en filas; las espiguillas están en pares
Fruto: cariópside (grano) de tamaño, forma, color y contenido de azúcar-almidón variables, se disponen sobre el receptáculo cilíndrico o raquis (coronta).
