Description:

Green stalk, red, bulbous, squishy seeds with hard center. Seeds break off from pod almost like the inside of a pomegranate.

Habitat:

Coniferous wetland forest

This looks pretty convincing. The weird part is, this is the only part of the plant that was sticking out of the ground. A single stalk, straight up from the mulch in the middle of the trail. There were no leaves or remnants of a flower or anything.
I agree with Suzanne. Looks like jack-in-the-pulpit.
