Description:

Chicory grows from 30-100 cm, has a tough, grooved, and more or less hairy stem. The flower heads are 2 to 4 cm wide, and usually bright blue, rarely white or pink. The leaves are stalked, lanceolate and unlobed.

Notes:

Root chicory (Cichorium intybus var. sativum) has been cultivated in Europe as a coffee substitute. The roots are baked, ground, and used as a coffee substitute and additive, especially in the Mediterranean region.
