Description:
An introduced perennial from Europe to North America, where it has colonized much of the continent. The leaves can be eaten raw while the root can be ground up as a coffee substitute. However, as these plants are most common in roadside environments where harmful pollutants can gather, it is best to not consume them on a regular basis.
