Diving ducks generally do not taste very good (due to the large amounts of fish in their diet). Canvasbacks are supposedly the exception because they favor wild celery (the species name valisneria is the genus name for wild celery). Sadly these guys' numbers seem to be on the decline and a sustainable harvest may no longer be possible.
