Description:
The Cultivar Group name Acephala ("without a head" in Greek) refers to the fact that this variety of B. oleracea does not have the usual close-knit core of leaves ("head") like cabbage. The plant is a biennial where winter frost occurs, perennial in even colder regions. It is also moderately sensitive to salinity. It has an upright stalk, often growing up to two feet tall. The plant is very similar to kale. Popular cultivars of collard greens include Georgia Southern, Morris Heading, Butter Collard (or couve-manteiga), and couve tronchuda.
Notes:
Many recipes out of these beauties! The usual boiled stuff is not bad, but we use them in calzones (for my Italian friends), or in other words stuffed in dough like a spinach pie.. Lots of onion/scallion, dill, some tomato, salt, pepper and olive oil of course.. Some folks add rice and feta cheese crumpled up as in spinach pies! Also great in lieu of the cabbage for a stuffed cabbage type of dish ( cabbage is ready a bit later in the season).
