Looks like a small grasshopper of some kind with what looks like two "spoon-like" structures extending from its mouth.

I agree, although I dnt believe the bug was actually blue I think my camera may have picked up on additional lighting or something.

That color of blue is so extraordinary in nature...maybe we should have a "Color Blue" mission.
