Description:

Beet greens can also be eaten and are very tasty.

Habitat:

Urban veggie garden.

Notes:

Good for You Beet Greens
Ingredients:
2 tablespoons olive oil
1/4 cup chopped onion
1 large garlic clove, minced
1 pound beet greens, washed, woody stems trimmed, chopped
1/2 cup white wine or water
1/4 teaspoon crushed red pepper flakes
1/2 cup pine nuts
Directions:

Heat oil in a large skillet over medium heat. Add onions and cook, stirring often, until onions soften.
Add garlic and cook, stirring, for 1 minute.
Add wine or water and scrape any browned bits from the bottom of the skillet. Stir in red pepper flakes.
Add the beet greens and stir to combine. Cover skillet and cook for 10 minutes, stirring occasionally, until greens are wilted and tender.
Add pine nuts, tossing to combine, and serve warm.

Next year I am going to plant golden, red, and candy cane beets.
The beets in my daughter's garden in VA did very well this year. I also eat the greens.
