Field Notes

Description:

Gray and white spider (obviously found a good spot to camouflage). Seems to be fuzzy, instead of smooth-bodied like most spiders in the area. No webs nearby, when insects walk by it tends to point itself in their direction as if watching them. May be a spider that ambushes prey rather than capturing it in a web.

Habitat:

Found on the side of an old shed. Area nearby can be described as open, sunny fields.

Notes:

Very restless and fidgety. Also seemed to be highly alert, would watch nearby insects, and was extremely startled by any tiny movement within a good distance.

You've just described the behavior of a spider that doesn't use a net, but actively stalks or ambushes prey. These spiders often lay a "dragline" of silk to arrest any falls. They are alert and have relatively good eyesight. This looks like a jumping spider.
