This was taken at night and it was so humid that my lens kept fogging up. This was tucked away behind a Panera bread.

That's what it looks like to me also Lars, and there are hardly any mushrooms (that I know of) that grow in that environment with a white cap and brown warts clustered in the centre.
I think Ivan is right - on the second pic you can see a slight tone of greenish gills
Looks to be an almost-mature Green-Spored Parasol, chlorophyllum molybdites. Those brown warts, that persistent ring, the flat umbrella-like shape of the cap, and the brown stem that this is found with all appear to match this suggestion, but I could always be wrong. What would make this almost certain is if you saw any faint or strong hints of green in the gills, as a camera might sometimes not be able to show this in a picture, especially if you were already struggling with the humidity.
