The spiders in your spotting are very difficult to identify because of their pale, almost white, colouring. I am pretty sure that this pallor does not represent their usual appearance. It looks very much like the colouring of a newly moulted spider. However there are things, other than colour alone, that can help to identify your spiders. The first is the eye pattern which can be seen in your photo. The eyes of Sparassidae spiders appear in two forward-facing rows of four, on the anterior aspect of the prosoma. So, I think it safe to assume that your spiders are from the Sparassidae. According to Wikipedia, there are more than 1,000 species in the family Sparassidae, but there are very few of them present in Greece. I will send you a Species ID Suggestion with a link to a scientific paper called “A catalogue of the spiders of Greece”. On page 92 (don’t worry, you can just rabidly scroll down to that page and ignore everything else). You will see that there are only a few confirmed Sparassidae in Greece and surrounding area. The reason that I can’t do this part for you is that I don’t know which part of Greece you live in. However, I am reasonably certain that, if you look at the species names on that page and then use those names to look for pictures in Project Noah or even, perhaps inaturalist, you will probably decide on something like Olios sp. Or if you feel very confident, maybe Olios argelasius Walckenaer, 1805.
