Description:

Found this deep in the woods. I'm not sure what species does this to trees?

Habitat:

Deep woods away from civilisation. Near a small pond with fresh water. Lots of rock cover for protection.

First guess, Black Bear, Beaver

I understand they use the small branches for food & to repair their lodges - the larger ones for their dams. You can see where the tree has been gnawed - to my knowledge beaver are the only creatures able to do this to that extent. There's a lot of info on wiki - I precis'd it for one of my spottings of a beaver lodge & dam - http://www.projectnoah.org/spottings/8980445
I'm liking the Beaver theory, we've also had Black Bear in the area. Do Beaver collect these small log like specimens?
