I observed this squirrel chipping bark off this tree, then hanging upside-down to consume it

Lots of insects live on the bark.
Yes, the eating of bark may indeed be that of dietary strategy. Its winter, and there is little to eat this time of year, even in the warmth of southern Florida. I found the eating of bark, even for a squirrel, a bit odd.
That's so cute! We had one that would hang like that on our "squirrel-proof" feeder and gorge himself!
Yes, its a nice and true information. In my place, some of squirrel also eat the bark of Swietenia mahagoni and some kind of plants. May be that behavior is one of diet strategy, (may be).
They are such amazing acrobats!
