The entire plant is edible, you may be familiar with some of it's cultivated varieties, radicchio and Belgian endive. The leaves of the wild plant are best when young. The root can be boiled and prepared like a vegetable, and when roasted and ground makes a pleasant coffee substitute.
The roots of the Chicory plant can be used as a coffee substitute and is an added ingredient to many foods for humans and animals as well.
